Greg Holder, chef and owner of the Palms, was born and raised in Canada. His parents are from Trinidad and Tobago originally. Growing up in and around Toronto, Greg became a bartender at an early age and was promoted quickly to manage some of the biggest and most famous pubs in town.
Influenced by his mother’s fantastic cooking skills and his own love for food, Greg decided to attend culinary school to perfect his own skills in the kitchen. He went to George Brown College and spent two years there before he decided to start his own catering company in Canada.
In April 2011, Greg had enough of the snow and decided to open a restaurant in the Caribbean. His Trinidadian roots and Canadian background allowed him to create an eclectic menu with a Caribbean fragrance. The Palms restaurant is a treat for tourists and locals alike. It is a place where you can relax, sit back, and enjoy a meal that will make you feel like home.
